Paximadi (Dried bread)

Paximadi comes from the word Paxamas that used to mean baker. It begun as a way to preserve bread but it has now turned into a very popular and very nutritious basis for many dishes. Paximadi is made out of corn, barley, wheat, rye and almost any kind of flour you can find. It is basically a traditional rusk or "hard bread" baked in Crete since the Antiquity that is often full of herbs like oregano or anise or even olive oil. Especially in Crete paximadi is the basis for the famous dakos which is a salad made with tomatoes and feta on top of a paximadi that you wet with water. The juices of the tomato and the added olive oil make the paximadi even softer and tastier and dakos is a perfect and very fulfilling meal during the summer.

Paximadi also replaces bread in many Greek tables that prefer something more healthy and unique. As every whole meal bread the fibers of the "paximadi" help for the good functioning of our intestines. It has a high dietetic value and it is essential in a well balanced diet

You can find the paximadi in super markets in Greece but the really special ones are usually in local island markets or small organic shops.

And of course next time you are in Greece try ordering a dakos instead of the typical Greek salad! It will make you see that a think as simple as dry bread can become a delicious everyday meal!

Zagori: Villages hidden behind mountains
