Roasted Potatoes

Roasted Potatoes

You dont have to be a gourmet chef to make yourself a tasty and filling Greek dish.

Ingredients:

1 kilo (2 ½ pounds) of long, large potatoes, peeled and cut lengthwise, into quarters
2 cups of extra virgin olive oil
½ cup of fresh, strained lemon juice
4 garlic cloves
2 scant tablespoons of Greek oregano or thyme
Salt and freshly cracked black pepper

Preparation:

1. Preheat the oven to 200 degrees Celsius (400 degrees F).
2. Toss all the ingredients together in a large, oven-proof glass or ceramic baking dish. Strew the potatoes in the dish so that they are, more or less, in one layer. Add just enough water to cover the bottom of the pan. Cover with aluminum foil and bake for about 1-1 ½ hours, or until the potatoes are tender but have not disintegrated. Add more water if needed during baking.
